Chole (Chickpea) Masala
Trying to be more regular at blogging, I will put up the recipes of the curries and masalas I make at my apartment here in Bangkok. I made Chole this week, so here is the recipe.
Soak Chickpeas in water overnight. This will help you cook them quickly.

- 250gm Soaked Chickpea
- 1 tsp Baking Soda
- 1 Tea Bag
- Water
- 1 Chopped Potato (Optional)
- 1 tbsp Chole Masala or Garam Masala
- 1 tbsp Cumin Powder
- 1 tbsp Coriander Powder
- 1 tbsp Red Chili Powder (Or use Green Chili for Thadka)
- 1 tbsp Turmeric Powder
- 1 tbsp Ginger Garlic Paste
- 3 Spoons of Ghee (Clarified Butter)
- 2 Chopped Onions
- Tomato Puree
- 1 Cup of Plain Yogurt
- Oil
- Water (Optional)
Boil the Soaked Chickpea (Chole) with Baking Soda and Tea Bag.
Baking Soda helps the Chickpeas absorb more water and cook thoroughly.
The Tea Bag gives a brownish color and helps neutralize the Baking Soda.
You can add one chopped Potato if you like.
Mix all the ingredients of Masala - Chole Masala/Garam Masala, Cumin, Coriander, Chili and Turmeric Powder, Ginger Garlic Paste
Add the mix to Boiled Chickpea (Chole)
Mix them all well.
Heat Ghee and add to the mix.
Heat Oil and Onion, and heat them till they are brown.
Once the Onion is brown, add Tomato Puree and Yogurt to the mix.
Cook them well.
Add the Chickpea (Chole) mix to this.
Cook it for 10 minutes.
You can add Water if you want to make it more like a curry (optional).
