Chicken Masala (My Way)
The best thing about cooking is that there is no set of rules to go by; you make changes as you go. That is why I will just guide you on how I make it, and you can experiment yourself.

- Chicken
- Plain Curd/Yogurt
- Indian Chicken Masala / Garam Masala
- Paprika/Red Chili Powder
- Coriander Powder
- Turmeric Powder
- Ginger Garlic Paste
- Lemon
- Salt
- Onion Diced into small Cubes
- Green Chili
- Ginger Garlic Paste
- Chicken Masala
- Oil
- Cream (to make it creamy/give it rich taste)
Take Curd/Yogurt and add all the ingredients mentioned above. I have not mentioned any quantities here because you can go with your gut feeling. I normally use enough Curd to immerse the Chicken in it.
Add other spices according to your taste.
I use a little Ginger Garlic Paste, because sometimes it overpowers the rest of the dish.
Lemon softens the meat and helps with better marination.
Mix everything with the Chicken.
Heat Oil on Pan
Add chopped Onion, Green Chilies (You could also Grind the Onion and Chili to paste and use it) and Ginger Garlic Paste
Cook them until Onions are brown
Add Chicken Masala & Salt
Add all the Marinated Chicken along with the Curd mix.
Let it cook for 15 mins in medium heat.
Check if the Chicken is cooked; if not, leave it to cook for some more time.
Taste the Chicken Masala; if you like, add Cream to your taste.
I normally try to marinate the Chicken for a day; if I am in a hurry, then one hour is a must. This helps the Chicken soak in all the flavors.
